Sake—a liquid art form woven from rice, water, and skilled artisans.

What is sake? It’s a “liquid art” woven from just four elements: rice, water, koji (rice mold), and the skill of the craftsman. While wine brings out the unique characteristics of the grapes, sake is a unique brewed beverage born from the dialogue between human skill and the bounty of nature.

The complexity of sake lies in its manufacturing process. From polishing the rice, cultivating the koji, managing the yeast, and monitoring fermentation, the brewing craftsman, known as the toji, uses all five senses to perceive temperature, humidity, and the progress of fermentation, striving for the perfect drop. This “human touch and intuition” is what creates a different character in sake from year to year, even from the same brewery. This unique, once-in-a-lifetime taste captivates sake lovers worldwide.

The range of sake flavors is surprisingly wide. From the fruity and elegant ginjo aroma of “Daiginjo,” to the prominent rice flavor of “Junmai-shu,” and the crisp, dry “Honjozo,” there’s a wide variety. Furthermore, a wide variety of styles exist, including cloudy sake, aged sake, and sparkling sake. Its depth, allowing for enjoyable pairings with food much like wine, is attracting sommeliers and food lovers worldwide.

The global sake market is currently experiencing explosive growth. Sake exports reached a record high in 2023, with demand particularly expanding rapidly in the United States, France, Singapore, and Hong Kong. In Malaysia, along with the growing penetration of Japanese food culture, interest in premium sake is increasing, and demand in high-end restaurants and bars is surging.

However, much of the “sake” distributed globally fails to fully convey the true appeal of authentic sake. Proper temperature control, effective storytelling, and collaboration with local partners—only when these elements are in place can sake truly demonstrate its value globally.
